I should also add: I substituted peppermint extract for the vanilla in the frosting, which makes the cake taste a little like a Girl Scout cookie.</description>

Mix 1/4 cup flour, 1/4 cup sugar, 2 T. cocoa, 1 egg, 3 T. milk, and 3 T. oil in a mug or bowl.  (I used a Correl bowl).  Put it in the microwave on high for 3 minutes, and you have a chocolate cake!  My third grade students loved making these at school after reading the book, Thunder Cake, by Patricia Polacco.  (I would also suggest all of Patricia Polacco&#039;s books!)</description>
