How Are You Celebrating Love?

I will be enjoying the first week of school vacation with my spouse and our son. We don’t have any special plans, but I intend to bake a cake later just because I’m always looking for an excuse to do so. (It will probably be the Chocolate Mocha Cake from the Moosewood Restaurant Book of Desserts, my go-to recipe for such endeavors. I’ll top it with Fudge Frosting from the The King Arthur Flour Baker’s Companion, also posted online at the KA Web site.)

  1. If you’re looking for a quick way to bake a cake with kids, try this:
    Mix 1/4 cup flour, 1/4 cup sugar, 2 T. cocoa, 1 egg, 3 T. milk, and 3 T. oil in a mug or bowl. (I used a Correl bowl). Put it in the microwave on high for 3 minutes, and you have a chocolate cake! My third grade students loved making these at school after reading the book, Thunder Cake, by Patricia Polacco. (I would also suggest all of Patricia Polacco’s books!)

    I should also add: I substituted peppermint extract for the vanilla in the frosting, which makes the cake taste a little like a Girl Scout cookie.
